Ingredients

10 minutes
  • HandfulBrussels sprouts
  • 3-4chestnut mushrooms
  • Chilli Flakes
  • knobbutter
  • Pickled onion (from my picked beetroot recipe)
  • Tempura
  • 2 tbspplain flour
  • 1 tbspmedium curry powder
  • Sprinkle dried thyme
  • salt and pepper to taste

Steps

10 minutes
  1. 1

    Mix tempura ingredients with a little water to make a loose batter similar to pancake mixture consistency.

  2. 2

    Prep brussels sprouts by trimming and cutting them in half. I tend to just do a handful for a small to medium portion for one as I'm the only person in my house that like Brussels so its always a treat just for me :)

  3. 3

    Place sprouts in the tempura batter mix and coat completely. Fry in a hot pan with a little oil until the batter is crispy and golden. Remove from the pan and rest on kitchen towel.

  4. 4

    In the same pan reduce heat to medium to low and add a knob of butter. Add chilli flakes, thyme and sliced mushrooms. Season with salt and pepper.

  5. 5

    Plate up. Serve mushrooms with the Brussels and pickled onion from my chilli Beetroot onion recipe :)
