Make your scrambled eggs Using a spatula breaking it up into small bits. Add the diced ham, keep cooking and stirring for about 1 minute. Then transfer the eggs and ham to a separate plate, and set aside.

Next, add the chopped shrimp and cook for 30 seconds until the shrimp is cooked. Transfer to a plate and set aside.

Put the cauliflower medley rice, eggs, ham, bean sprouts and shrimp back into the skillet, give a quick stir. Add soy sauce and sesame oil, keep stirring and continue cooking for about 2 minutes.

Remove from the heat. Serve and enjoy! Garnish with scallions
