Ringan na ravaiya or stuffed eggplant is a very popular type of curry amongst Gujaratis. Besan and crushed peanuts are mixed with some spices and with this filling eggplants are stuffed. With eggplants, small potatoes can also be filled and added to the curry. If you do not find small potatoes you can use big potatoes cut into big pieces which taste equally delicious. Ringan na ravaiya can be served with Khichdi and kadhi.

Ingredients

  1. 3 tbspcoarsely crushed peanuts
  2. 3 tbspbesan /gram flour
  3. 1/2 tspturmeric
  4. 2 tspred chilli powder
  5. 2 tbspcumin coriander powder
  6. 2 tspgaram masala
  7. Salt to taste
  8. 2 tspginger paste
  9. 2 tspgarlic paste
  10. 1 tspgreen chilli paste
  11. 2 tbspoil
  12. 2 tbspcoriander leaves
  13. Other ingredients -
  14. 6baby eggplants
  15. 3potatoes
  16. 3 tbspoil
  17. 1/4 tspmustard seeds
  18. 1/4 tspcumin
  19. 1/4 tsphing /asafoetida
  20. 1tomato finely chopped
  21. 1.5 cupwater
  22. 2 tbspcoriander leaves
  23. 2 tbspfresh garlic

    Add all the ingredients required to make filling in a bowl and mix everything well.

    Wash eggplants and clean them leaving little bit of stalk part. Now make a cross from the other side leaving the eggplant intact. Prepare all the eggplants in the same way. Wash and peel potatoes. If you are using big potatoes then cut them into big pieces. If you are using baby potatoes then make a cross leaving the potato intact. Now fill eggplants and potatoes with the prepared filling.

    Heat oil in a pressure cooker and add mustard seeds. When it crackles, add cumin and hing to it along with finely chopped tomatoes. When oil separates from the tomatoes, add eggplant and potatoes to it along with remaining filling. Now add 1.5 cup of water, if you like more gravy you can add up to 2 cups of water in it. Now cook it on medium heat for 2 whistles and let the pressure come down itself. Sprinkle fresh coriander leaves and garlic on top.

    Serve ringan na ravaiya hot with khichdi and kadhi.
