Ingredients

50 minutes
Serves 6 servings
  • 2/3 cuprice flour (about 60 grams)
  • 1 3/4 cupssweet potato starch (about 220 grams)
  • 1 cuppotato starch (about 120 grams)
  • 2 1/3 cupswater (about 550 ml)
  • Meatball filling
  • 1.1 lbspork (about 500 grams)
  • 1.1 lbscooked bamboo shoots, diced (about 500 grams)
  • 15dried shiitake mushrooms
  • 3 tablespoonsrice wine
  • 6 tablespoonssoy sauce paste
  • Five-spice powder, to taste
  • 2 tablespoonsfried shallots

  1. 1

    Soak the shiitake mushrooms until soft, then chop them. Cut the pork into thick strips. Dice the cooked bamboo shoots and set aside.

  2. 2

    Heat oil in a pan. Add the pork, bamboo shoots, mushrooms, and all seasonings (rice wine, soy sauce paste, five-spice powder, and fried shallots). Stir-fry over medium heat.

  3. 3

    In a pot, mix the rice flour and potato starch with water until smooth. Cook over low heat on the stove, stirring constantly until the mixture thickens, then remove from heat.

  4. 4

    Add the sweet potato starch to the thickened mixture and stir until well combined.

  5. 5

    Lightly oil small plates, then spread a layer of the dough mixture onto each plate.

  6. 6

    Add a portion of the meat filling on top.

  7. 7

    Cover the filling with more dough mixture.

  8. 8

    Steam in an electric steamer for about 15 minutes.
