Ingredients

  1. 60 mlOlive Oil
  2. 2Onions, peeled and chopped
    How to dice an onion with no tears
  3. 5 clovesGarlic, peeled and thinly sliced
  4. 150 gpitted sundried Olives
  5. 1000 gPork neck steaks, cubed
  6. 15 mldried Basil
  7. 15 mldried Oregano
  8. 7,5 mldried Rosemy
  9. 15 mldried Parsley
  10. 7,5 mldried Thyme
  11. 1dried Chilli, diced
  12. 2,5 mlGarlic powder
  13. 2,5 mlWasabi powder
  14. 250 mlRed Wine (use a Shiraz or Cab)
  15. 800 gpeeled tinned Tomatoes
  16. 2,5 mlSalt
  17. 2,5 mlPepper
  18. Sugar

Steps

  1. 1

    Heat Oil in shallow casserole, fry Garlic and Onions. Add Olives and fry till Onions are soft.

    Add Pork and fry till edges become brown.

    Add Basil, Oregano, Rosemary, Parsley, Thyme, Chilli, Garlic- and Wasabi powder. Combine herbs and spices with meat and allow flavours to infuse.

    Deglase the casserole with the red Wine and add Tomatoes. Reduce heat and simmer covered till Tomatoes are cooked.

    Season to taste with salt, pepper and sugar. Serve with cooked Spaghetti.

Tips

How to dice an onion with no tears

Using a chef's knife, slice off top-end. Don't slice off the roots. Peel the onions.
