Ingredients

60 minutes
4 servings
  • 1/3 cupoil-packed sundried tomatoes
  • 1/2 cupwalnuts
  • 1 1/4 cupvital wheat gluten
  • 3/4 cuptexturized vegetable protein
  • 1 cupcooked lentils
  • 6 tbswater
  • 2 tbssoy sauce
  • 3 tbsstore-bought pesto
  • 1egg
  • 1/4 cupgrated romano or parmesan
  • 1/4 cupricotta or cottage cheese
  • 1/2 cupwhole wheat breadcrumbs or one slice multigrain bread
  • 1 tspblack pepper
  • 1small yellow onion diced

Steps

60 minutes
  1. 1

    In food processor, pulse sundried tomatoes and walnuts into a paste then add remaining ingredients until texture is crumbly.

  2. 2

    Pinch dough and roll into golf sized balls (about 20 to 25 balls)

  3. 3

    Steam for 25 minutes, turning half way through.

  4. 4

    Serves as you would any prepared meatballs.

  5. 5

    Can be frozen.
