For the Khaman, Mix gram flour, citric acid, rava amd water. Keep aside.

In a small bowl mix salt and sugar and oil. Add 1 tbsp of hot water and mix till all.sugar granules dissolves. Add this water to the above mixture. Add ginger-chilli paste.

Grease the dhokla plate and keep water to boil in a steamer. Add fruit salt and 1 tsp of water to activate the fruit salt. Pour the batter in the dhokla plates and steam khaman for 15-20 min.

Let them cool and cut into desired shape.

Heat oil in a pan..Add mustard seeds, cumin seeds,sesame seeds,. green chillies, hing and curry leaves.

Add chopped onion and salt and cook till onion turns golden in colour. Add turmeric and khaman pieces. Mix well.
Serve with chutney of your choice.
