In a bowl add all the chopped veggies like spinach, onion, capsicum, coriander leaves and chopped green chillies. Give everything a good mix.

Now add all the dry masalas like besan, cornflour, baking powder, salt and ajwain. Now mix everything well until you get a lumpy consistency. You can throwout the excess water removed. Then add ginger-garlic paste and give it a good mix.

Now heat a pan, add sufficient amount of oil for deep-frying. Now drop a tbsp of the palak mixture into the oil. Keep the flame on medium heat and fry the pakoras until it turns crispy and golden. Now remove them over a tissue paper. Serve them hot with some ketchup or chutney of your choice.
