I saw Nigel Slater make this dish on tv before Christmas and I’ve been wanting to make it ever since. I’ve made some changes based on the veg I had lying around that needed using up. My first recipe of 2022 🎉

Cooking Instructions

Soften the onions in a splash of olive oil, don’t allow them to brown.

Bash the juniper, salt and rosemary leaves in a pestle and mortar and add to the softened onions. Continue to cook for another 5 mins.

Add the chopped veg to the onions and give it all a good stir. Now add your masala, stir again and then sprinkle in your flour.

Add the stock, chestnuts, bay leaves and a pinch of pepper. Simmer for 20 minutes.

Now add the porcini mushrooms, mustard and redcurrant jelly. Simmer for another 20 mins. Serve when the veg is tender and soft.
