Ingredients

4 servings
  1. 2onion, roughly chopped
  2. 1 sprigrosemary
  3. 2 tspdried juniper berries
  4. Pinchsalt
  5. 3parsnips, chopped
  6. 4small potatoes, chopped
  7. 1small Swede, peeled and chopped
  8. 160 gcooked chestnuts
  9. 4 tbspmasala wine
  10. 4 tbspflour (I used gf)
  11. 400 mlsveg or chicken stock
  12. 2bay leaves
  13. Black pepper
  14. Handfulporcini mushrooms
  15. 1 tbspwhole grain mustard
  16. 1 tbspredcurrant jelly

Cooking Instructions

    Soften the onions in a splash of olive oil, don’t allow them to brown.

  2. 2

    Bash the juniper, salt and rosemary leaves in a pestle and mortar and add to the softened onions. Continue to cook for another 5 mins.

    Add the chopped veg to the onions and give it all a good stir. Now add your masala, stir again and then sprinkle in your flour.

    Add the stock, chestnuts, bay leaves and a pinch of pepper. Simmer for 20 minutes.

    Now add the porcini mushrooms, mustard and redcurrant jelly. Simmer for another 20 mins. Serve when the veg is tender and soft.

I love Nigel slater he comes up with no waste food and his ideas are good no frills he just cooks it and it all looks delicious 😋
