Southern-Style Ginger Soy Sauce with Tomatoes

I originally thought only the flavors from Tainan were sweet, but when I hiked the Alangyi Ancient Trail in Pingtung at the end of November 2021, I discovered that Pingtung's flavors are also quite sweet. Out of love for local small farmers' ingredients, I bought some local soy sauce paste, and it turned out to be perfect for dipping these traditional-style tomatoes. However, I replaced the black persimmon tomatoes with beefsteak tomatoes because black persimmon tomatoes are hard to find now. I serve this dish as a refreshing salad between courses at dinner parties.
Southern-Style Ginger Soy Sauce with Tomatoes

Cooking Instructions

Cut the beefsteak tomatoes in half, remove the core, then cut each half into 3 to 4 pieces. Each tomato should yield about 7 to 8 bite-sized pieces. Arrange them on a plate after cutting.

Peel the ginger slightly, then grate it into a paste and place it in a small dish. Pour 2 tablespoons of sweet soy sauce paste over it. If you like, you can also add 1/2 teaspoon of plum powder, which I think would be quite suitable.
