Microwave-steamed Tofu & Hijiki with Gingered Sweet and Sour Sauce

I made up a healthy recipe using tofu.

You can use fresh hijiki seaweed.
The cooking times will differ according to the type of microwave you have. It usually takes 11 minutes with my microwave to be done.
When steaming in the microwave the cooking juice might spill over so use a big plate to avoid this. Recipe by EnjoyKitchen

Ingredients

4 servings
  1. 300 gramsTofu (silken)
  2. 2 tbspMe-hijiki (dried)
  3. 150 gramsMinced chicken breast
  4. 3Egg
  5. 1Salt and pepper
  6. 1add as much (to taste) Young green scallions (if you like)
  7. 1 piece●Grated ginger
  8. 2 tbsp●Water
  9. 80 ml●Ponzu
  10. 2 tbspSugar
  11. 1/2 tbsp● Katakuriko

Cooking Instructions

    Soak the hijiki seaweed in water until tender and drain.

    Put the tofu in a bowl and whisk until creamy. Add eggs, minced chicken, salt and pepper and stir.

    Spread a sheet of cling film on a deep dish (this prevents the tofu mixture sticking to the dish) and pour in the tofu mixture. Cover the dish with another layer of cling film. Make holes to let the steam out. Steam in a 600 W microwave for 11 minutes.

    Turn over the tofu mixture onto a big serving plate. Put the ● ingredients together in a small sauce pan. Heat and stir until thickened. Pour the sauce over the top of the steamed tofu mixture.
