Ingredients

2 hours
2 people, makes 1 pint, 500 ml
  1. 2 cupschopped and sliced fresh ginger root
  2. 2 cupsboiling water
  3. 1 cupcane sugar
  4. 1 cuporganic honey
  5. Cost: our own honey is free, farmers market honey is about $2.50 a cup, cane sugar is about 60 cents a cup, ginger root $2, per cup cost $2.55

Cooking Instructions

    Break ginger root in pieces, scrub, rinse. Leaving the outer skin on gives a stronger ginger flavor. Chop and slice, pour 2 cups boiling water over pieces, slow boil till half the water has evaporated.

    Drain ginger juice through kitchen towel and colander into pan. Save boiled ginger pieces in jar with tsp salt to eat with sushi.

    Add cup of sugar, cup of honey to ginger juice concentrate, strir, bring to boil, pour in bottle, cap. Done, enjoy!
