Ingredients

  1. 1/4 cupMiso (soy bean paste) :
  2. 1 cupBonito flakes (dried skip jack tuna) :
  3. H20 : 1 to 2 inches to cover the kombu
  4. 1 bagKombu (seaweed) :
  5. Mushrooms: 5 buttons
  6. Dark greens : 2 leafy kale, mustard and, turnip greens
  7. 1Leeks :
  8. 1 canBamboo shoots :
  9. Tofu (firm) : dice
  10. 2 teaspoonsHosin sauce :
  11. 1 teaspoonThai paste :
  12. 2Peppers (serrano) :
  13. Salt and pepper to taste

Cooking Instructions

    As you know dice your aromatics and set them to the side. This recipe will go a little different so PAY ATTENTION!
    Gentle rinse the kombu piece place it in a medium pot with H20 & gently simmer for 10 minutes. Don't let boil or the kombu flavor will turn BITTER.

    Soak the Wakame in a small bowl of warm H20 for at least 5 minutes to rehydrate.

    Remove the kombu from the soup. Drain the Wakame and it to the soup along with the aromatics. Simmer for 1 to 2 minutes.

    In a small bowl stir miso paste with the hot broth. Until smooth than stir back into the soup.

    While that is simmering away cut your tofu. Season it along with the bamboo shoots. Add a teaspoon of oil to the pan. Place in your tofu to brown the outside. Add the bamboo shoots for a crunch !

    Ladel the broth in a bowl and place the tofu on top ! Here you MISO SOUP
