Fluffy Sausage Omelet

Cooking Instructions

Cook ground sausage on medium heat. Add black pepper, salt, crushed red pepper, and Herbs de Provence.

While sausage is cooking, dice red bell pepper and shred cheddar and pepper jack cheeses. I bought my Pico de gallo from the store, so it is already prepared.

Remove sausage from heat when fully cooked.

Take 2 or 3 eggs (depending on your omelet size). Crack and separate yolks from whites. Place egg whites in a medium mixing bowl.

Add 2 TBSP milk to egg whites and use an electric mixer to beat egg whites until stiff.

Add yolks and mix until just blended. Do not over mix!

Heat small skillet (9-10 inches) on low heat.

Once skillet has been heated, add egg mixture and cover with lid.

Cook on low heat for 3 minutes.

After 3 minutes, add desired filling. I sprinkled cheddar, pepper jack, ground sausage, Pico de gallo, belle pepper, and more cheddar on 1/2 of the egg mixture.

Gently fold omelet and add desired amount of cheese on top. Place lid on skillet and heat until cheese is melted.

Add desired toppings. I added avocado, Pico de gallo, and red bell pepper.
