Slice the onions into thin strips, and chop the epazote and guajillo chiles.

Mix together and add salt to taste.

Stuff the carp with the mixture, wrap each fish in corn husks, add a small piece of butter, then wrap with aluminum foil.

Place on a grill, griddle, or skillet over low heat for 1 hour, until the juices run clear.
