Japanese style Mabo tofu with Shirataki noodles

Shitataki noodles or Konjac noodles is made of konjac. I like its rubbery and chewy texture. It’s also rich in fiber and low in calories.

In a pot, add a cup of water and bring it to boil. Boil shirataki noodles for 2-3 min. Remove from the pot. Drain. Transfer to a serving plate.

In a large nonstick saucepan, heat vegetable oil with medium heat. Stir fry minced pork for 1-2 min until it’s turn light brown and add mabo tofu sauce.

Simmer for 2-3 min before adding kinu tofu. Gently mix tofu with the sauce. Turn off the heat.

Serve the mabo tofu sauce on top of Shirataki noodles or stir noodles in the sauce before serving.
