Budget Friendly Recipe: Sweet and Savory Ginger Pork on Rice

I came up with this recipe, after seeing an idea for a budget friendly recipe on TV. I adjusted the seasonings and ingredients to suit our family.
Don't turn the meat over too often while frying. It tastes better if each side is well-browned. Recipe by Soreiyu

Steps
- 1
Cut the cucumber into thin strips. Rub salt, and set aside. Squeeze out well, and discard the liquid.
- 2
Shred the shimeji mushrooms. Cut the pork offcuts into bite-sized pieces.
- 3
Combine the seasonings marked ☆. Grate the ginger and onion, and mix with the seasonings.
- 4
Heat vegetable oil in a pan, add the pork, and fry until it's well-browned on both sides.
- 5
Add the shimeji mushrooms and stir fry quickly.
- 6
Mix the seasonings in Step 3 and simmer to reduce the sauce.
- 7
Put the cucumber from Step 1 on top of the rice, and pipe on mayonnaise. Put the ingredients from Step 6 on top, and serve.
