I learned about the ratio of katakuriko to flour on TV, and love it! The chicken turns out super crisp.

Ingredients

4 servings
  • 400 gramsChicken thighs
  • 2 tbspCooking sake
  • 1 tbspSoy sauce
  • 1 tbspShiro-dashi
  • 1/2 tbspSugar (white sugar)
  • 10 gramsGinger (grated)
  • 5 gramsGarlic (grated)
  • 2 tbspWater
  • 1Katakuriko and flour (1:1 ratio)
  • 1Frying oil

Steps

    Put all of the ingredients except for the chicken in a plastic bag to make the marinade.

    Chop the chicken into bite-sized pieces, then add to the marinade. Let it sit for at least 20 minutes. I marinated mine in the morning and cooked it at night.

    In a separate plastic bag, combine katakuriko and flour at a ratio of 1:1. Coat the chicken in this katakuriko mixture.

    At first, the sound of deep frying should be soft.

    When it's ready, the chicken should be sizzling.
