I'd seen recipes for this here and there and I had to try it out once the liquor ban was lifted and I could buy vodka again. I ran out of pancetta so I used plain bacon instead. 🇮🇹🇺🇲🍸🍝🍅🥓

Cook pasta according to package directions. Reserve 1 cup pasta water. Set aside.

Add 1 cup water and bacon on high heat. When the water is about to boil away reduce heat to medium and continue to fry until bacon is crisp, about 5 minutes.

Add onions and cook until transparent, about five minutes. Stir in Calabrian chili or chili flakes, fry for about a minute. Add vodka, increase heat to high, let boil until reduced to about half, approx. 2–3 minutes.

Reduce heat to medium and add tomatoes and reserved pasta water. Season with salt and pepper. Bring to a boil and then reduce heat to low and simmer until sauce thickens, about 10 minutes. Stir in cream, let simmer for 2-3 more minutes.

Add the pasta into the sauce, toss to coat. Pour grated Pecorino Romano cheese and mix. Serve topped with more cheese.
