Porkchop Traybake with Pear, Onion and Celeriac
Quick, easy, healthy!
Cooking Instructions

Preheat the oven to 200c.
Peel the onions, pears and celeriac.
Cut the onions in four pieces. Remove the core from the pears and divide them in six to eight parts. Cut the celeriac in 1cm thick strips.
Remove the leaves from the thyme. - 2
Divide the celeriac, pear and onions over your tray. Sprinkle with oil and season with thyme, pepper and salt. Bake in the oven for 25 minutes.

Peel and mince the garlic. Mix the honey, mustard, garlic, paprika powder and some pepper and salt. Spread the marinade on the porkchops.

After 20 minutes, toss de vegetables and add the porkchops. Bake for 5 more minutes.

I don't often plan complete dishes in my head. Usually it's just one component, like the main, and everything else is almost afterthought. That wasn't the case here, as this complete dish came to me in the middle of the veg aisle at a local supermarket. Maybe it had something to do with all the meds coursing through my system, that'd I'd taken to fight the first nasty cold of 2022, but whatever. I'll take it. It was nice going into the kitchen knowing exactly what needed to be done. Maybe I should cook more often while hopped up on cold meds. Robert Gonzal -
