Ingredients

2 hours 30 minutes
3 dozen small cookies
  1. Orange or lemon zest
  2. 275 gramsflour
  3. 100 gramssugar
  4. 1 teaspoonbaking powder
  5. Dashsalt
  6. 125 gramsbutter, cold
  7. 1egg
  8. 1 teaspoonvanilla extract
  9. 1 tablespoonvodka (plain or citron)
  10. 3 ouncesbittersweet chocolate, chopped

Cooking Instructions

    Zest an orange in a bowl to catch citrus oil. Add flour, sugar, baking powder, and salt. Mix.

    Transfer to a food processor with butter and mix.

    In a small bowl beat egg, vanilla, and vodka.

  4. 4

    Add to food processor and mix until incorporated.

    Transfer to a flat surface over plastic wrap. Mold into a flat rectangle, wrap, and refrigerate for an hour.

    Preheat oven to 350F.

    Take out doug and let it rest for 15 minutes. Roll to 1/4-inch thickness. Cut shapes and place on a cookie sheet lined with parchment paper.

    Bake for 10 minutes. Let cool.

    Place 2 ounces chocolate on top of a double boiler (top bowl must not touch simmering water). When melted, remove from heat, mix in rest of chocolate, mixing until all has melted.

    Dip or cover cookies in/with chocolate. Let chocolate harden completely.

It’s vodka, not whiskey. Vodka doesn’t impart flavor to the mixture but provides moisture to make the dough workable. Vodka will quickly evaporate at baking, therefore limiting the formation of gluten, which tends to make cookies too hard. It can be replaced with milk or water.
