Healthy cookies, because it is January (the month all about healthy diet and snacks). But that doesn't mean you can't enjoy something sweet!
Steps

Preheat the oven to 180'C.

Peel and mash the fresh figs. I used White Genoa Figs, but any figs can work.

Chop / crush the nuts finely. Not too fine, leave some larger bits.

Fold the nuts into the mashed figs.

Fold the oats and cinnamon into the mashed figs/nuts.

Spray a muffin tray with cooking spray and add muffin paper cups. Do not use muffin tray without paper cups, the mixture / cookies is very wet. Alternatively use ramekins / soufflé dishes.

Scoop 1/4 cup of mixture into the muffin cups and sprinkle with cinnamon.

Bake for 30 minutes or until golden brown.

Carefully take out of the pan and place cookies on a cooling rack to cool for 10 minutes.

Best enjoyed cold the next day. Place in a closed container in the fridge once cold.
