Egg Malai Masala

Egg Malai Masala is simple, easy to make, delicious and creamy egg masala. The creamy gravy is made from a silky onion base gravy with spices and cooked in milk topped with hard boiled eggs.
To begin with onion and green chili grinder to fine paste. It is then sautéed in oil for 10-15 minutes until raw smell completely goes away. Then spice powders and milk is added and cook covered until oil separates. Then the eggs are placed and cooked for few minutes and finally garnished with ghee and coriander leaves.
Egg Malai Masala pairs well with roti, naan, jeera rice and steamed rice for lunch or dinner..

Boil eggs, peel and slice into half. Set aside. Make a fine paste of roughly chopped onion and green chili.

In a kadai heat oil and add in onion paste. Fry for 3-4 minutes until raw smell goes away. Add in ginger garlic paste and fry for 2 minutes. Add in spice powders and fry.

Add in water and cook until oil separates.

Add milk and let it come to boil. Add in eggs upside down. Cover and cook for 3 minutes.

Flip the eggs, drizzle ghee and garnish with coriander leaves.
