Pour the yogurt in a little bowl. Add chopped parsley and grated garlic and a little salt and mix. Set aside.

Melt butter in a sauce pan. Add red or alpine pulbiber pepper, stir a little and then add the olive oil and turn off the heat and set aside. Break egg in a small bowl.

In a small saucepan, pour about one and a half cups of water and put it on a medium heat. Add the vinegar. when the fine bubbles appear, add the egg. 2.5 to 3 minutes later, remove it and drain on a kitchen paper.

Pour yogurt in a deep dish. PlCe poached egg in the center and pour pepper butter on top. Garnish with chopped parsley. Serve with flat bread or sourdough bread.
