Spanish Potato Omelette or Tortilla Espanola,a traditional dish of Spanish cuisine has all the goodness of eggs, potatoes and onions. Apart from these other variations like adding chopped capsicum, green chillies, mixed herbs,chilli flakes and cheese lend an unique flavour to these thick fluffy tortillas. Serve this Spanish Potato Omelette for breakfast, brunch or dinner with salsa,tomato sauce, or with crusty bread and grated cheese.

Peel and cube potato into small pieces.Smear little salt and fry the potato in low flame.Set aside.Next saute chopped onion,capsicum and green chillies.

Beat 2 eggs and add the fried vegetables in the egg.Add 1/4 th tsp salt,cornflour,chilli flakes and coriander.Beat till well combined.Heat oil in a pan and pour half of the egg potato batter.Sprinkle grated cheese.

Add rest of the batter on top and cook covered for 5 minutes. Check if the omelette is well fried at the bottom. Carefully flip and fry the other side of omelette.

Sprinkle some grated cheese. Slice into 4 triangle pieces and serve in breakfast,brunch or a light dinner alongwith salsa,tomato sauce or with crusty bread and grated cheese.
