Steps

Chop veggies, par boil peas and keep aside

Assemble all other ingredients

Wash flatten rice very nicely and keep in colander to drain excess water. Fry cashews till golden brown and keep aside.

In moderately heated pan add oil, add mustard seeds + bay leaf and allow to crackle, then add curry leaves and sauté for few seconds.

Then add onion and sauté for few seconds, then add ginger and sauté till onion turns translucent. Add chopped veggies + little salt + turmeric and stir fry till veggies turn soft and crunchy. This process takes around 3-4 minutes.

Add par boiled green peas and stir fry for 1– 2 minutes. Then add washed Flatten rice +sugar + salt, mix gently and simmer for 2-3 minutes.
Lastly squeeze lemon juice and mix well, POHA is ready. - 7
Garnish with cashews and serve hot hot.
