Preheat the oven to 350°F (180°C).

Fill a saucepan with water and bring to a boil. Add the unpeeled, well-washed oranges and boil for 7-8 minutes.

Place the oranges in a blender and blend, including the peel, until you have a smooth paste with no lumps.

Beat the eggs as you would for an omelet, then add the orange paste, almond flour, spices, and sweetener if using. Mix well with a fork or whisk.

Add the baking powder, baking soda, and vinegar, and mix thoroughly.
