Steps

Cut the cauliflower florets into small pieces. Wash them and soak them in hot salted water for 5 minutes. Drain water and keep aside.

Peel and wash potatoes. Cut into 1-inch pieces.

In a kadhai, heat oil. Add cumin seeds, mustard seeds, and then add onions. Cook them till they turn translucent. Add ginger-garlic paste. Cook for 3- 4 minutes. Add tomatoes and cook covered till they turn mushy and tender. Cook till oil starts oozing out.

Add turmeric powder, red chili powder, coriander powder, and sabji masala..saute for a minute. Now add the chopped potatoes, green peas, and cauliflower.

Add ½ cup water and salt as per your taste. Cook covered till all the vegetables are cooked and water dries up. Garnish with fresh coriander leaves. Serve them with puri, Phulkas, and jeera rice. (see recipe)
