Meatloaf is a great comfort food. My daughter sent me her recipe but I changed it a little. Very tasty and the glaze/sauce is simple but fantastic.

Ingredients

75 minutes
4-6 servings
  1. 2 lbsground beef
  2. 1 cuppanko breadcrumbs
  3. 1large onion
  4. 1jalapeños
  5. 2eggs
  6. 1 cupRomano cheese grated
  7. 4large garlic cloves
  8. 1/4 cupketchup
  9. 1/4 cupfresh parsley chopped
  10. 1 tspWorcestershire sauce
  11. 1 tspblack pepper
  12. 1 tspdried thyme
  13. 2Beef bouillon cubes crushed
  14. For Sauce/ glaze
  15. 1 cupketchup
  16. 1/4 cupcider vinegar
  17. 2 Tbspbrown sugar

Cooking Instructions

    Preheat oven to 350°F. Mix sauce ingredients in a bowl and set aside. Spray non-stick oil on a loaf pan.

    In a food processor chop onion, jalapeño and garlic. Add ketchup, Worcestershire sauce, parsley, black pepper, beef bouillon, and thyme to food processor and mix. Pour contents in a large bowl, and using your hands, mix with bread crumbs, cheese, eggs, and hamburger meat.

    Put meat mixture into the loaf pan. Spread some of the sauce to cover the top of the meat and put in oven. Bake for 60-75 minutes. You want the internal temperature to reach 160°F. At about the 45 minute mark apply more sauce to the top of the meatloaf. When done, remove and let sit for 10 minutes.

    Cut meatloaf into 8 slices. Plate the meatloaf slice, drizzle some sauce on top, and sprinkle some grated cheese on top. It goes great with mashed potatoes.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
