Why can't we keep enjoying delicious food when we're on a diet? As a proud Mexican, I used to eat everything with beans and tortillas, but my doctor told me to avoid them for my health and weight. I'm not upset because it's for my own good, so all it takes is a little creativity and knowing which foods we can use to cook new and delicious recipes like these cheesy Swiss-style enchiladas, where I swap out the tortillas for a dough made from pork rinds and cream cheese! Blend the pork rinds with the 4 eggs, then mix in the cream cheese until you have a dough.

Spread the dough in a glass baking dish and let it rest for a few minutes.

Cook and shred the chicken breast.

Prepare the green salsa.

Serve the shredded chicken over the pork rind base, then top with sour cream and green salsa.

Add mozzarella cheese on top and bake for 25 minutes at low heat, or microwave for 8 minutes until hot and bubbly. Enjoy while hot.

If you don't want to use pork rinds, you can make traditional Swiss-style enchiladas with tortillas instead.
