Ingredients

  • 2chicken breasts
  • 3 1/2 ozuncooked pasta (about 100 grams)
  • 1zucchini
  • 2vine tomatoes
  • 1lemon
  • 1white onion
  • 2 clovesgarlic
  • Soy sauce
  • 1chicken bouillon cube
  • Curry powder
  • Cilantro

    Cook the pasta in a pot of water according to the package instructions.

    Make the marinade by mixing: the juice of the lemon, minced garlic, 1 tablespoon of cilantro, 2 tablespoons of soy sauce, crumbled chicken bouillon, 1 tablespoon of curry powder, and 1 tablespoon of water.

    Add the chicken, previously cut into thin strips, to the marinade. Refrigerate for 15 minutes.

  4. 4

    Meanwhile, boil the tomatoes to peel them and dice them.

  5. 5

    Also dice the zucchini into small pieces without peeling it.

  6. 6

    Finally, finely chop the onion.

  7. 7

    In a pot, cook the chicken strips (set aside the rest of the marinade) for 5 minutes without oil or butter.

  8. 8

    Add the chopped onion and zucchini, and cook for another 5 minutes.

  9. 9

    Finish by adding the peeled and diced tomatoes with the rest of the marinade. Let it simmer on low heat for the last 5 minutes, covered.

    P.S., don't forget to stir at each step, of course 😉

    Serve the dish with your pasta (it would also be very good with rice if you prefer) 🤤 and enjoy 🙏
