My family’s favourite fried rice! - Mayonnaise and soy sauce are the secret ingredients🪄💫

I found this recipe on Cookpad Japan a few years ago and have been repeating it. ❤️

I haven't been well for the past week or so, so when I recovered yesterday, I didn't have many ingredients left in the kitchen. So this recipe was the one I could still make with the ingredients I had on hand. You can substitute ham, sausage or any other meat you like for the spam, or just skip it!

There are two key points:
💡 Add mayonnaise and soy sauce (adjust quantities to suit your taste)
💡 Add the lettuce at the end to keep it crunchy

Ingredients

2 people
  • 300 gJaponica rice (weight before cooking) - I often use leftover rice too!
  • 450 mlWater
  • 1/2 tinSpam (or ham, sausages, meat)
  • 1/3Lettuce leaves
  • 2Eggs
  • Canola oil
  • 1 table spoonMayonnaise
  • 1/2 table spoonChinese chicken stock powder
  • 1 tea spoonSoy sauce
  • To taste Salt and pepper

    Rinse rice and leave in water for at least 30 minutes to cook soft and delicious rice. Drain the rice from the colander, place the rice in a pot and add water.

    Heat over high heat until it boils. Once it boils, reduce heat to low, cover the pot and cook for 10 minutes. After 10 minutes, wait another 10 minutes without opening the lid.

    Crack the eggs, wash the lettuce and cut the spam into bite-sized pieces.

    Heat some oil in a frying pan and brown the Spam. Add the eggs and cook for 1 minute. Add the cooked rice and fry over medium to high heat. Mix well.

    Add chicken stock powder and mayonnaise. Once it’s mixed well, add soy sauce. Adjust to your taste with salt and pepper.

    At the end of the step, add lettuce and quickly stir and cook for 30 seconds.
