For Easter Sunday, I wanted to treat my family to this delicious dish!

First, cut the vegetables into thin strips. Sauté them in a pot with a little oil.

Chop the green onions and parsley. Add them to the pot. Add a little salt. Cook for 5 minutes and set aside.

Lay the pork shoulder out on the table. Season as desired.

Add the filling. Roll it up and secure it.

Place on a baking sheet. Brush with chimichurri sauce.

Bake in a preheated oven at 350°F (180°C) for about 2 hours.

Tip: Make a few cuts in the pork skin so you can brush it with chimichurri sauce and it will be even more flavorful.
