This Hydrabadi Soya Biryani is a simple and easy one pot meal recipe made in a pressure cooker. It is a perfect meal when served with simple sides like raita and salad.
One of the common issues for most people who do not like soya chunks is that it is tasteless or that it has a strong soya smell . To fix this problem... Firstly I cook the chunks until soft and completely squeeze out the water to ensures that the soya smell is mostly removed. And then I marinate cooked soya chunks in spice powders and curds to ensures that the soya chunks absorb maximum flavor.
When cooked with fragrant basmati rice, the soya biryani turns out delicious.

Steps

First let the soybeans chunks flourish in hot water for ten minutes.
Then filter it out in a bowl. - 2
Now in soybeans chunks add ginger garlic paste, curd, cumin powder and salt to taste and mix it well and leave it for ten minutes.
Further, heat 1tsp oil in a pan add marinated soybeans chunks and cook on low-medium flame till the chunks turn golden brown.
Keep it ready. - 3
For barista,
Cut 2 onions into thin slices make sure they are almost same thickness.
Heat oil in a pan, add onion slices and fry. Keep the flame on low-medium.
Once they start changing its colour take out half onions that we use with vegetables.
And fry the remaining onions until crisp and golden. - 4
Next, Wash and soak rice for 30 minutes.
Heat 3 cup water in a deep pot add in 1tbsp ghee, brown cardamom, green cardamom, cinnamon, bay leaf, soaked rice and 1/2tsp salt. Cook until the rice cooked upto 90%.
Drain extra water and keep the rice ready. - 5
In a pressure cooker heat the remaining oil of onion. Splatter sahi jeera and add slices onion, cook till onion becomes translucent. Now add baby potatoes and cook for 2-3 minutes then add ginger-garlic paste cook until raw smells good.
Further, add turmeric powder, chilli powder, cumin powder, biryani masala, salt, kasmiri mirch powder and tomato paste. Combine everything together and cook for 6-7 minutes, then add fried soya chunks. Combine everything togetherand turn off flame. - 6
Layered cooked rice over the vegetables. Then, on top spread barista (fried onions), saffron milk, coriander leaves, mint leaves, ginger slit and chilli slit.
(This stage You may also add 1tsp kewra water, if you like)
Cover the lid and cook for 12-15 minutes on very low flame. - 7
Let it cool at temperature until the pressure inside the cooker goes down naturally.
Open the lid and fluff the rice carefully with a sharp spatula.
Hyderabadi Soya Biryani is ready.
* Serve hot with raita and onion salad. Enjoy
