Your Shrimp Ceviche Cocktail de Cameron

Heat salted water in a pot to rolling boil. Turn off heat and immediately add peeled and deveined shrimp. Leave for 2-3minutes, til shrimp is opaque then remove, drain and set shrimp aside for 10min til cool.

When cooled, cut shrimp into 1/2in sections, add to bowl with diced tomatoes, onion, jalepenos, lemon juice, lime juice, salt, peppers, and ketchup.

Add orange/tangerine juice, mix all ingredients together and cover with plastic wrap. Place into fridge for at least 1 hour, but preferably 3+hrs

Cut Flour/Corn tortillas into chips and drop into 350°F preheated oil, fry for 2-4min, until golden or desired doneness. Salt immediately, Drain by hanging basket to drip or dumping chips onto paper towel lined plate

Remove shrimp mixture from fridge, add freshly diced avocado, stir and then plate to serve. May serve in bowl or fancy glass. Tortillas served on side!
