Ingredients

  1. 4-6medium sized potatoes (we used Russet but Yukon Gold or your favorite variety can be used)
  2. 1 stickbutter(melted)
  3. 4-6 sprigsfresh Rosemary
  4. Finely chopped garlic
  5. Finely chopped chives
  6. Bacon crumbles
  7. Parmesan cheese

Steps

  1. 1

    Wash potatoes with a vegetable brush.

  2. 2

    Make 1/8 inch slices along the length of the potatoe. Be sure not to slice completely through the potato so a fan effect keeps each potato intact.

  3. 3

    Brush each slice with melted butter. Sprinkle chopped garlic and herbs of your choice in between the leaves of potato. Dress with grated Parmesan cheese. Bake in a 350 degree oven for 30-45 min or fork tender.

    The combination of herbs are countless.....experiment! Enjoy!!
