Cooking Instructions

Take wing sprinkle with salt and spread on a wire Cooling rack. Over a try and put in top of fridge for 8 hours or up to 24

Do NOT rush the fridge stage. It drys the skin so makes the best crispy wings.

Heat a pan with veg oil. You must get oil to 190c

Mix the 2 flours and coat the wings. Then careful put 5 wings in the oil and cook for 7 mins.
Do not do more. You need the oil stay hot. - 5
Take out first batch and dry on some kitchen paper and then repeat with 2nd batch

Sprinkle with a little more salt and serve. WOW
