Boiled yam and egg sauce is a staple meal that I think is irresistible to anyone who is a lover of yam and eggs. Easy to prepare and simply delicious.

Start by peeling your yams. Put in a pot, add your water, and salt and leave to boil until your yam is soft enough.

Sieve out the water and set it aside.( but I always prefer to boil my yam when I am already making my sauce, so it can still be hot when my egg sauce is ready.

To prepare your egg sauce.
Cut all your onions, peppers, and tomatoes in tiny bits(diced) and set aside. - 4
Continuously stir in between to prevent burning.

On your pan add 1cup of oil allow to heat up, add your onions, saute for 2mins, add your tomatoes and pepper and allow to fry until the oil settles on top this just take 5mins.

Then add your bell peppers, fry for a minute and turn off your gas. You are done. Your egg sauce is ready. You can go ahead and serve it with your boiled yam.

Once your tomato and pepper mix is done, add your curry &thyme, knorr, multipurpose spice or any spice of choice, and salt to taste allow to fry for 2mins.

Add your whisked egg and allow to fry for 1minute before scrambling. Leave to fry for 3mins.
