I love Ratatouille. So many vegetables in one meal. It usually does not get beans in it. I added some black beans for some protein.

I love Ratatouille. So many vegetables in one meal. It usually does not get beans in it. I added some black beans for some protein.
Steps

Cut the eggplant into cubes.

Heat olive oil in a pan. Fry the eggplant for 10 to 15 minutes or until they are brown and soft.

Remove the eggplant from the pan and set aside.

Chop the baby marrow and patty pans.

Add olive oil to the pan. Add the chopped baby marrow and patty pans. Fry for 8 to 10 minutes. Season with salt.

Remove from the pan and set aside.

Chop the onion. Add oil to the pan and fry in the until translucent.

Chop the tomatoes and add to the onions. Cook for 15 to 20 minutes or until the tomatoes are soft.

Add the brown sugar, tomato paste and season with salt. Cook for 5 minutes.

Add the cooked eggplant, baby marrow and patty pans. Add the whole peeled tomatoes. Mix and cook for 5 to 10 minutes

Roughly chop the basil. Add the chopped basil and can of black beans to the ratatouille. Cook for 2 minutes.
