Parwal ki sabji is made with pointed gourd, potatoes & a few handy spices. It’s a simple recipe that you can make anytime with the ingredients that you already have in your pantry.
Steps

Wash and peel slightly the parwal (pointed gourd) Cut length wise. Wash and peel potato. Cut wedges of potatoes.

Heat oil in a pressure cooker. Once when the oil is heated add mustard seeds, cumin seeds, asafoetida, green chillies, grated ginger and fenugreek seeds. Saute them until aromatic.

Add tomato pure and cook well until the oil is oozed out.

Add turmeric powder, red chili powder and coriander powder. Add parwal and potatoes. Saute for 2 minutes on high. Add salt and 1 cup of water.

Cover the lid and cook the sabji on medium low until 2 whistles.

Open the lid once the pressure of the cooker is released and add garam masala and chopped coriander leaves. Serve immediately with chapati, roti or rice.
