In a bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, and sugar. Mix well. Add the yogurt and mix again. Gradually add the milk and knead to form a soft dough. If needed, add a little water to make the dough soft. Cover and let it rest for 2 hours.

After 2 hours, knead the dough again. Divide into small balls, lightly coat each with oil, and cover with a cloth.

Heat a skillet or griddle well. Take one dough ball and roll it out to your desired thickness. Sprinkle some nigella seeds (kalonji) on top and press gently. Brush the other side with water and place the naan, water side down, onto the hot skillet. Press gently. When one side is golden brown, flip the skillet to cook the other side until golden. Brush with butter and serve hot with dal makhani or any curry.

Basic Naan Basic Naan
There are a variety of ways to make naan - with baking powder or baking soda, adding eggs, etc. but I settled on this simple combination of ingredients using instant dried yeast. Since naan is made to eat with curry, there's not much need to season it. Since they're so plain, pretty much anyone will like these.Since there is no second proving, these can be made relatively quickly. There's no need for oil when baking.
