My Spring Greens & Chilli Chutney

In the late spring the garden is usually full of greens/herbs that are ready to be picked. Here's a fiery and delicious green chilli chutney that I like to make using those greens.

In my version I used radish leaves, spearmint leaves, a bunch of coriander and the green tops from some shallots. Chives also work well. You'll need around 5-6 large handfuls to make one jar of chutney.

Try eating with curries, burgers, sarnies, eggs, potatoes or meat such as beef, chicken or lamb. It's a really versatile chutney. This is actually a variation of my coriander & mint chutney which is also available on my recipes.

Ingredients

  • Several handfuls spring greens, (coriander/radish leaves/mint),
  • 2green chillies, seeds left in,
  • 1.5 tsppure crunchy peanut butter,
  • 3 clovesgarlic, minced,
  • 2 inchesfresh ginger, chopped roughly,
  • 1 tbsplemon juice,
  • 1/4 tbspmalt vinegar,
  • 1level tsp cumin powder,
  • 1 tspsugar,
  • 1 pinchsalt,
  • 1 dashwater

Steps

    Wash the greens then chop up roughly. Add to a food processor and blitz with the lemon juice until roughly chopped.

    Add in the green chillies, cumin, ginger, garlic, sugar and a dash of water. Blend for 2-3 minutes.

    Finally add in the crunchy peanut butter. Blend again for 1-2 minutes until finer in texture and lighter green in colour.

    Decant into a sterilised jar. The chutney should keep in the fridge for around 2-3 weeks. Enjoy! :)
