Raw mango or Kairi pickle, such a tasty &quick ready pickle. We can take it with roti, bread & as aam papad. Very easy to prepare & different taste.
Steps

Peel the outer skin of Kairi & wash it. Now soak it with a clean cloth. Separate the pulp from kernels.

In a heavy bottom pan add clove,hing & jeera, roast it without oil. Now add mango slices & sugar.

Mix all ingredients together. Now on mid flame cook it use lid. Check it occasionally. Sugar melts & mango slices cooked.

It change it's color. Now add both salt & both mirchi in it. When all spices mix proper & mango absorb total sugar, check it & taste it.

If required add more spices & cook some more time. At last add melon seeds & keep aside for best aroma.

Easy,tasty & quick prepare pickle is ready for serve.
