Prepare the chicken satay skewers for grilling.

Wash the chicken and marinate it with baking soda.

Trim off the white tendon in the center of each piece and any white connective tissue, then slice the chicken into long, thin strips.

Mix all the marinade ingredients together and marinate the chicken for about 20 minutes.

Thread the marinated chicken onto skewers. Place 5 skewers per plastic bag for easy freezing and thawing.

Grilling the chicken satay skewers:

If using frozen skewers, thaw them in water to make them easier to separate for grilling.

Preheat a skillet or grill pan over medium heat. Brush the chicken with the prepared low-fat coconut milk (about 3.5 oz or 100 grams for 15 skewers). Grill, brushing with coconut milk and turning the skewers. Repeat this process three more times until the chicken is cooked through.

Serve with satay sauce and ajaad (Thai cucumber relish).

Sauté the massaman curry paste until fragrant, then add the coconut milk and simmer until it starts to bubble.

Reduce the heat, add the ground peanuts, coconut flavoring, stevia, and salt. Bring to a boil again, then simmer for another 5 minutes before removing from heat.
