Ingredients

About 20 minute
For 3 People
  • 1large lotus root(250g)
  • 1-cup water(200cc)
  • 1-teaspoon vinegar
  • 1red chili pepper (as you like)
  • sesame oil (or olive oil)
  • soy sauce (as you like)
  • 3 tablespoonssweet cooking sake (mirin)
  • 2 teaspoonssoup stock/ toasted sesame seeds (as you like)

    The lotus root has strong residue, it will get darker without soaking in the water before cooking.

    Peel the lotus root and cut into bite-size chunks. Mix 1-cup water and 1-teaspoon vinegar into a bowl. Soak lotus root in it for 10 minutes and drain. Heat sesame oil in a skillet. Add red chili pepper and stir for a few minutes. Add lotus root and stir for a few minutes.

    When the lotus root is heated thoroughly, add soy sauce, sweet cooking sake and soup stock. Stir constantly.

    Before you dish up, you should taste it. If the taste is weak, please add 1-teaspoon of soy sauce.
