For Kachori: Knead a soft dough using water with the dough ingredients. Cover with a wet cloth and rest dough for 10 minutes

For masala: Mix besan, salt, chilli powder, ghee and pinch soda. Add water and prepare a paste like masala. This step is optioal. Even plain Kachori tastes good.

Knead dough well. Add some water if required. Make small puri and stuff a little masala paste. Close and roll into a big thin puri using dry maida

Deep fry in hot oil. Once the puri bloats turn and keeping gas on simmer, fry the Kachori crispy on both sides

Cool all Kachoris well for about an hour and store in an airtight container
- 6
Assemble the Kachori with desired chat ingredients

Enjoy hygienic chat at home
