Easy Sweet Potatoes

We went to Sebring yesterday to run errands and we stopped at a little roadside produce market. That is one thing I absolutely love about Florida. Fresh on demand. He had the prettiest little sweet potatoes, straight out of the ground. Today, I roasted chicken and baked the sweet potatoes. This is almost nothing but heavenly and there’s never leftovers.
Easy Sweet Potatoes

Preheat oven to 350. Do yourself a favor and line your baking sheet with parchment paper or foil. You can thank me later. Bake pricked potatoes for about an hour or until soft and the sugar is bubbling.

Allow the potatoes to cool enough to handle but leave the oven on. Peel the skins off the potatoes and add to an oven proof dish. Mash with a fork then add the butter pieces around the dish. Sprinkle the brown sugar and salt over the top and slide the dish into the oven until the butter and sugar melts. About 10 minutes or so. Remove from oven and stir.
