It's best to make the filling the day before assembling the empanadas so it is well chilled.
Cut the beef into steaks.
Season the beef with one chopped garlic clove, oregano, salt, pepper, and a little vegetable oil. - 2
Heat a metal griddle well and grill the beef on both sides. Let it cool completely before dicing so it doesn't lose its juices.

Heat the oil in a steel skillet and sauté the garlic and onion together.
Add the beef, raisins, and spices, and cook for about 5 minutes.
Add the wine, heat through, then turn off the heat. Let the filling cool completely before making the empanadas. - 4
DOUGH PREPARATION
In a pot, heat the water with the salt and shortening just until the shortening melts. - 5
Place the flour in a large bowl.
Mix the wine with the beaten egg and stir into the flour. - 6
Add the water with melted shortening and mix well. Finish kneading on the table until a ball forms.

Divide into 16 balls of about 3.5 ounces (100 grams) each and roll out with a rolling pin to form disks.

ASSEMBLING THE EMPANADAS
Place the dough disks on the table.
Divide the beef filling among the disks.
Add a piece of hard-boiled egg and an olive to each disk. - 9
Brush a little water around the edge. Fold the disks to form a packet. Place the empanadas on a metal baking sheet lined with parchment paper.

Brush the tops with beaten egg.
Preheat the oven to 450°F (232°C). - 11
Bake the empanadas for about 25 minutes until golden brown.
Serve immediately.
