Trying to recover Aunt Elvira's recipe (my grandfather's sister), I came across a version by Karlos Arguiñano. It's similar, although I'm sure she would have used lemon instead of lime. I thought it was perfect for a picnic with my whole family. There are two versions: with or without gluten. There were more than 20 of us.
The recipe uses 2 1/2 cups whole milk (600 ml), 2/3 cup cornstarch (70 grams), and 1/2 cup sugar (100 grams).

In a saucepan, heat 3 1/3 cups milk (800 ml) with the citrus peels and cinnamon sticks until it comes to a boil, then let it steep for a few minutes.

In a separate bowl, mix the cornstarch with 3/4 cup milk (200 ml).

Strain the infused milk into the bowl, using a sieve to remove the citrus peels and cinnamon sticks.

Return the mixture to the saucepan over medium heat. Add the sugar and stir constantly until the mixture thickens and solidifies.

Chill the custard in the refrigerator (I left it from afternoon until morning). I used very deep pans, but next time I'll use shallower dishes or less mixture.

Remove the chilled custard and cut it into cubes.

For the coating, beat the eggs. Lightly coat each cube in flour, then dip in egg, and fry in batches in a skillet over medium heat for about one minute per side.

Place the fried cubes on a plate lined with paper towels to drain excess oil. (In the photo, the gluten-free version is coated with cornstarch.)

Sprinkle with a mixture of sugar and ground cinnamon.
