First prepare the dosa batter. Wash and soak 3 cup rice+ 1 tsp methi seeds for 6 hours. Also wash and soak 1 cup urad daal for 6 hours.

Then grind urad daal till creamy and fluffy. Then grind rice and methi seeds along with 1 cup washed poha to make a smooth batter. Mix both the batters well. Cover with lid and keep in a warm place. Ferment for 8 hours.

Then mix salt and combine well. Do not overmix. Then heat a tawa. Grease with oil. Pour laddlefulls of batter. Spread into round and thin dosa. Pour 1 tsp oil on edged. Pour 2 tsp butter on top and let it melt.

Cook dosa on high flame on both sides to golden. Pour butter on base too and make it crisp.

Serve with coconut chutney and 1 tablespoon butter on top.

Coconut chutney: Grind together 1 cup fresh grated coconut, 1 piece ginger, 1 piece tamarind, 2 chopped green chillies, 1/2 cup washed coriander leaves, 1 tsp cumin, 2 tablespoons roasted chana daal or Futana, 1 tsp oil, salt to taste and 1/4 cup water. Make a smooth paste. Add more water. Pour in a bowl. Temper with 1 tablespoon oil, 1 tsp mustard seeds, 1 tsp Channa daal, 1 tsp urad daal, 10 curry leaves, 1/4 tsp hing and 2 dry red chillies. Let it all sizzle and pour on coconut chutney.
